In the years since he wrote Kitchen Confidential, Bourdain has explicitly noted enjoying vegetarian meals while traveling in India. He also has gained appreciation for chefs who work closely with produce farmers, such as Thomas Keller, where attention to producing flavorful vegetable dishes (as a result of being involved with how the produce is grown) are an expanding trend and more prevalent now than when he wrote that quote. But you gotta admit, his fascination for roasted whole pig from various cultures around the world is much more in line with his target audience (including me), than the limited appeal of vegetarianism. Hey, I eat lots of tofu and mycoprotein products as well, but I'm not giving up meat anytime soon.

Oh, and I might add, as a vegetarian & a foodie, I wouldn't go into a place with nothing vegetarian on the menu & make them come up with something for me on the fly. That does kind of suck for the chef. I just wouldn't eat there.

As a vegetarian who has worked in several fine dining restaurants, I'd have to say he's not alone in his hatred of us. I'm noticing a lot of seriously world class places offering vegetarian tasting menus now, though, including French Laundry & Charlie Trotter's, so there are open-minded chefs out there. Charlie Trotter even did the raw diet for a while himself.

Just different worlds, I'm afraid. It is funny in a way. However, there are all kinds of astounding and delicious cuisines that are entirely vegetarian or vegan. I, personally appreciate both vegan and omniverous foods. When I choose to eat animals or dairy products, I look for the most consciously and sustainably produced ones. It's a small part of my diet, but I feel it's necessary from time to time. The problem I have with this attitude from the chef is his sense of pompous entitlement, not appreciation. But frankly, that is an attitude that can be found on both sides of the argument.

the guy, like so many other chefs, is totally clueless when it comes to making food without his precious animal products. This is more sad than funny. Pathetic, actually :)
