What tool/gadget could you not live without in your kitchen? My vote goes to my Oxo "Good Grips" measuring cups, which have a "ring" inside on an incline, with the measurements marked, so that you look down into the cup as your pouring to read the measurement (no more squatting!). My sisters say I'm obssessed with these measuring cups, but they are just so damn handy, and so simple, that you wonder why it took so long to get such a thing on the market.

- A lathed rod of wood. It's sort of like a dowel, but was lathed to have a smoother shape with curves. It's good for stirring or smashing (not as large as a full sized rolling pin) or smacking kitchen interlopers with.
- A citrus reamer. A simple and lovely design. Though a friend of mine gave me a super-duper citrus press for Christmas, that I need to make mojitos with.
- A microplaner. Pretty and delicate shreds.
- And always, my oven thermometer.

In order of importance in my kitchen
1. The Silver serving spoon that 3 generations of woman in my family have used for just about everything from whipping potatos to scraping the bottom of the bean pot.
2. Cast Iron Skillets. I have 3 and I use them weekly.
3. Food Processor. I have no idea what I did before I got this lovely little gadget.

Fri, January 28, 2005 - 11:01 AM#1 Without question, my rosle garlic press. It is the single greatest piece of practical design I have ever witnessed. It is so simple, so seemingly identical to any old garlic press, and so laughingly overpriced (~25$). And yet, I constantly marvel at how perfect it is. Everyone I have given one to comes to me months later and thanks me for it. Each having thought "but I already have a garlic press".
#2 My electric knife sharpener. I don't use it very often but it's really nice to have around. If your knife is your most important tool, one of these is the way to go.
#3 Again, my rosle martini shaker, perfect, simple, seemingly identical to every other shaker on the market and yet, beautiful, no leaks, easy to take the top on and off. Amazing. A pleasure every time I use it.
PS. The rest of the rosle line leaves me cold. They are so overpriced as to be insulting. -

I stopped using presses quite awhile back, since I got tired of the mashed pulp of garlic that is usually the result. I've been chopping my garlic ever since. Does the rosle produce an end result closer to knife-chopped garlic? -

Sun, January 30, 2005 - 5:04 AMAs a travelling chef, I recently had all of my kitchen equipment lost by British Airways. The very first things I replaced were my wusthof 7" santuko, my microplane, and a silicone rubber spatula.
Voodoo, be careful with the electric knife sharpeners, they tend to grind off a little too much of the steel. I highly recommend using a diamond blade steel. I use it about twice a week on my knifes (just running them over the stell like you would any other steel, at a 15 degree angle). I have never had to sharpen my knives and they have kept there shape for years now.

w/c is a great school. I wished I'd gone to SF State, they have an

Mon, January 31, 2005 - 9:42 AMIt's hard to explain and not obvious at first. Naturally the press looks beautiful, all metal, simple clean design etc. The real difference is after a month or so when you have crushed a few hundred bulbs and realize just how much easier it is to operate, clean and use hold. The cavity is spacious, flips out for cleaning with just a flick of your finger (no more digging with a chopstick or fork), the handle has a wonderfully smooth action in its movement, the weight is firm and reassuring. I just love the thing. Of course, if you prefer chopped garlic, it has no real value for you. But I'm too lazy to chop up a whole head of garlic. I used to chop garlic with a cleaver but got lazy as it bacame a more ubiquitous ingredient.

Hmmmm, my microplane grater doesn't do so good with ginger and I took several layers of skin off a finger once trying it. Ginger is challenging, yes? I have a ceramic dish with little spikes in it for mangling ginger, but I'm not in love with it either. Anyone have other suggestions? I've resorted to ginger paste in a tube out of desperation, but of course the flavor leaves much to be desired. -

1. Wearever (antique) citrus juicer (the press kind)
2. Cleaver (you can smash garlic with one whack!)
3. My roommate's microplane
4. Cast iron skillet
5. Small porcelain crock pot (for melting cheeses!)
6. Grapefruit spoon (ok, I haven't used it yet, but I just know I'm going to love it!)
To Holly, ginger is so awesome you have it give it a go again! Use a large piece so you don't accidently grate your finger too. They're not too expensive and they actually freeze well. You can peel it by running the side of a spoon, it should peel easily. I use a microplane (the thin one) to grate the ginger. Good luck!

Wed, February 2, 2005 - 7:47 PMMy primary kitchen tool is a Shun 10" santoku - it's my every-day knife. It took less than a week to supplant the Wusthof 8" chef's knife that had been my daily knife for like 4 years before that. With it goes a small wooden cutting board that I use constantly.
Next would be the waiter's tool which opens the beer and wine I consume (and occasionally actually put into the food) while cooking.
Next would come several sets of little bowls in all manner of shapes from sushi dipping saucers to small soup bowls. Most are Japanese (and look it) and most are ceramic. I use them for ingredients and fill them as I prep. They keep everything organized and readily at hand and I can very rapidly wash them as I use them so they help keep the kitchen cleaner. -

I also love my $3.99 mini-cleaver I bought in Hawaii chinatown (b/c I bought a dragon fruit there and had to eat it right away!). It is a fabulous knife- as good as my german knives, though it will probably fall apart soon.
The other thing I have that I take a lot of delight in though it is pretty silly and only has one use (it was a very thoughful gift!) and isn't small, is my shrimp butler! It makes it so quick to cut and de-vein the shrimp!
There is one other thing I never seem to put away- it is always on the stove, in the oven or the dishwasher is my calphalon everyday pan. It is the perfect size- best $35 I ever spent on a pan!

I would have NEVER even thought of buying it for myself but now I find myself buying it as a housewarming or wedding gift for everyone else.
It's an electric pepper grinder with a little tiny light that shines on the food while you are grinding. Seems like the3 most ridiculous thing but it's addictive! I can't remember who makes it at the moment. I think a German company. -

And while yes it isn't a top of the line of the line maker.... My 10" chef's choice knife... which I'm ashamed to say I have let fall into a state of woeful dullness as I can't afford to take it in to get it sharpened... and I no-longer own a whetstone to do it myself... :( -

Thu, February 10, 2005 - 3:58 PMI'll third the cast iron, but I'll up the ante with enamled coating. I worship my set of Le Creuset pans. Ain't nothin' like the searing power of cast iron and the enamel makes clean up much easier. Not to mention they're soooo purty.

I feel so much more comfortable using them for many tasks than I do a fork, stirring spoon, even spatula. (flipping omelette or scrambled egg, grilling or pan frying fish or meats, etc.)
I've been given and have tried various pairs of oversized 'cooking chopsticks' but they have always been clumsy and cumbersome, so I just stick to your standard garden variety kinds.

The ones I use most are the "fait tout" casserole (French for "does everything," and I do use it for a million different things!) and the (approximately) 6" skillet which is perfect for making a cute little one-egg omelette. Enameled cast iron rocks my world.
And I love my Henckel knives, too.
My other favorite kitchen gadget would have to be my partner, Lev. :) -

The only real essential one is a decent knife. Though I have to admit I have a Chinese vegetable cleaver I bought years ago for $10 that works better than the knives I typically find in friends or relatives kitchens.
I can cook without the Le Creuset, but I do miss it when cooking in a kitchen without anything similar.
I've actually ended up buying decent cheap knives and pans at restaurant supply stores for people when I got sick of trying to cook for them with the crappy gear they had.

If I had to narrow it down to one it'd probably be the spatula. Great handle and the silicone goes all the way up the handle so food doesn't get stuck between the spatula and the handle. I also love my salt cellar, but I'm not sure that qualifies as a gadget as much as a storage device. -

Fri, April 28, 2006 - 5:14 PMI can't say there's much "draw" to them (silicone spatulas) but they won't react to the heat of a skillet, melt and poison you like plastics will, they are thermally stable and food safe. I have a silpat my girlfriend gave me last year and they 're reinforced silicone mats that lie on a baking sheet. Nothing will stick to them and like all things silicone, they handle heat very well...

Tue, February 14, 2006 - 4:04 PMI have a tool called an "ULU" that is great for chopping...it has a curved medieval axe shaped (Approx. 6") blade topped by a nice wooden handle. It is the best chopping tool I have found..Mine came from Alaska as a gift...I highly recommed the "ULU" for all your kitchen chopping needs!

i am very much looking forward to aquiring a vitamix and kitchen aid mixer in the near future

1) microplane graters WITH HANDLES. I have the old rasp grater from before and I don't like that one as much. I have 3 different sizes - one for hard cheeses, one for spices and ginger, and one for shreds like veggies.
2) my electric teakettle. I never make tea but I use it to quickly boil water without taking a burner up on the stove. I use this baby daily.
3) wooden spoons - I prefer olivewood but I end up tossing them in the dishwasher which ruins them, so I just get the cheapos at the grocery store
4) big bad wire cutters to open things like lobster shells, cut chickens apart, remove fish bones, etc
5) my Solis Master 5000 espresso maker. It's a fully automatic gigantic counter taker-upper and I wouldn't give it away for the world. -

Ok, so tell me a few things you DO with your mortar and pestle. I've always coveted them, but never could justify buying one 'cause I really don't know what I'd use it for. . .
I also love my cheap, thin plastic cutting mats. Especially for camping.
And my sink has one of those boiling water spigots. You know, instant cup of tea. . .At first I thought it was cheesy, but now I love it.

I can't believe noone else mentioned kitchen scissors as one of their fav items. I bought some wusthof scissors and leave them on the countertop because, without fail, they get used EVERY day. The two sides can very quickly be popped apart for easy cleaning and they hold a sharp edge like nobody's business.
Even if you think you don't them get some. They're perfect for cutting meat , harvesting herbs, opening bagged foods, trimming skewers, etc, etc, etc...just about anything you can think of.

2. Rubber rings in various sizes that fit on the end of my rolling pin so I get an exact depth, 1/4 inch, 1/8th, etc., for my dough.
3. Super-sized stainless steel round spatula that lets me move cake layers around for torting.
4. Measuring cups and spoons in irregular sizes, such as 2 tablespoons, 1 1/2 tsp, etc.
5. Kitchen scales, so I can measure more accurately.

In no particular order (so none of them will get upset): silicone spatula, giant non-stick wok, rabbit wine opener (makes me sad twist off is becoming to popular), rubber mat for under the cutting board (no more slippy!), plane grater, Henckles Satoku knife, and narrow measuring spoon set, for fitting into spice jars.
But I think my favorite would have to be the silicone-tipped locking tongs. Good for everything. Man, I love tools.

I just got a food processer. So that is my hearts desire at the moment. But I guess my cast iron frying pan is my real favorite.

My ex bought me all sorts of gadgets when I was married but I always went back to my knives. Whatever those gadgets can do my knives can do better and faster and thats including cleanup! I am a chef and while I love great kitchen items I always end up using my knives the most.
My next fav thing is the microplane graters and zesters. They make quick work of hard cheeses. My next fav is the silicone basting brushes. After yrs of using everything out there , I just love these and even bought a set of them with BBQ tools for my son and son in law for Fathers Day. No more strays in my food....no residual gunk left in them or smells and they clean up great I just pop mine in the dishwasher.

Wed, December 6, 2006 - 12:43 PMMy Cusinart Food Processor...I just don't see how anyone can cook without one...I do a lot of canning and it makes at least one of the processes go so much faster!!! I do love the Oxo good grips stuff though...I've become very arthritic in my hands and those big rubber handles are great!

If you are thinking about upgrading drawers....you owe yourself to try BLUM MOTION draw hardware.
Its completely hidden and has a slow-down and whoosh up tight feature when you slam em shut with your hips.
Works great with food on your hands...use your hips to shove it closed...the blum motion hardware closes it gently no matter how hard you shove it...all the tools inside don't slam around as well...makes opening and closing the drawers a sensory experience in quality hardware.
Makes a HUGE difference in one's perception of getting to the "tools".

- My baking stone, which produces a killer pizza crust.
- My extra thick wooden cutting board from Ikea. I didn't think it would last since it only costs $20, but it's been a real workhorse and looks just as stunning as the day I bought it. -

Mon, April 9, 2007 - 6:25 PM1. A vintage mixing tool called a Foley fork. They were made in the Midwest and I haven't seen a new one since the 70's. My grandmother used them and mom too. They are great for whipping, mixing, cutting in flour/butter. Totally multi purpose gadget. I have 3 and always look for more.
2. My Messermeister 6 inch chef's knife. Bought for me by a friend - one of my best birthday gifts ever.
3. Handmade bread board - it's 24 inches by 24 inches and has a rubber gasket underneath to keep from slipping - best thing ever. -

id also add my stanton cake knife, a slick concept knife that works!
oh and the philip starke juicer is amazing!
ps id like to add my contempt for electic stoves and cant wait to get back to my gas one in london! you just cant work with them! horrible, nastey things!

Thu, October 11, 2007 - 2:42 PMI have at least three. My Wusthof Trident 10" chefs knife (it would have to be #1 if I have to choose), my 12" non-stick wok ( I can cook anything in this!), and a high-temp spatula from The Pampered Chef that a client owned (what an awesome tool!!)
