What to do with Kale?

I’ve never been a huge fan of kale. I’m more of a chard girl. To me kale is that stuff in the salad bar stuffed in between the dressing crocks for decoration.

But I got a nice looking bundle of it in my CSA box last week and I’m determined to figure out one or two recipes I can live with. Word on the street is it’s damn good for you.

So, who here likes kale, and what do you DO with it?

    I wash it off and eat it raw. I like the flavor.

    I was also thinking it might be pleasant being thrown in at the last minute to a skillet that contained carmelized onions, some garlic, pepper, and balsalmic vinegar.

      carmelized onions. Mmmmmmmmmm. Almost better than good sex.

      I cant eat it anymore because it's way high in vitamin K. Which is great for people not on blood thinners. But when I used to be able to eat it I thought it was atrocious as well as beets. Grody to the max for shar Becky. Like totally. Way. But I knew it was VERY healthy for me and put it in my juicer and you couldnt even taste it. Juice that kale baby!!! Juice the hell out of it. It's sooooooooo healthy for you and your mama. : )

        Perhaps you can do what I do - keep my meds so that I'm on the "high" end of the range, so when I sometimes eat foods high in vitamin K I remain in the theraputic range. But you may have a more conservative INR range than I do.

          H-man why do you take coumadin? You have mechanical valve too? I think I'm supposed to be between 2.5 & 3.5. I always forget. I dont even know what the number means really. I just avoid all foods high in k for the most part.
