SO big props to The Food Network for profiling Primatti Brothers and allowing me the chance to check them out here in South Florida!! :)
Well, my recent experience got me thinking.....

I for one like to Grill a Big thick Chicken Breast with a Terrriyaki Marinade
Place grilled Terriyaki Chicken Breast on a nice Onion or Kaiser Roll of Soft French Bread with some Wasabi Flavored Mayonaise
A nice piece of Munster, Guda or perhaps even Pepper Jack Cheese (I like to get it all melty on the chicken breast)
A leaf of Romaine Lettuce
A thinly sliced purple Onion
A Thinly sliced Ring of Pineapple
And
Voila!!
A tasty little personal creation I like to enjoy on occasion
Along with some tater chips and a good micro brew or guiness beer :)

Re: Your Favorite Sandwich Creation....
Wed, August 6, 2008 - 3:42 PMDuring the summer months, it's all about the heirloom tomato pesto panini!
Hand pick the most ideal heirloom tomatoes from your garden or favorite farmers market stand. You know you wanna go with those crazy colored ones! : ) Slice into ~1/3" slabs.
Get a big lump of fresh mozzarella and slice into ~1/3" slabs.
Make some homemade pesto with tons of basil, lots of finely grated parmigiano reggiano, pine nuts, garlic galore, really good olive oil and salt and pepper. Be sure to taste several times, just because it's so good and you can.
<drooling just typing about it>
Heat your panini pan (we just use a grill pan with a cast iron grill press on top), brush two slices of your favorite yummy bread (huge sourdough slices work deliciously) with olive oil and slather the opposite side of one of them with copious amounts of your pesto.
Grill the piece without pesto on one side until slightly golden and crispy, then flip it over and quickly put the mozzarella slabs on the hot bread. Stack with an even layer of fatty tomato slabs then cover with the pesto slice and squish it with the grill press or top of panini maker. Flip when bottom slice is golden brown then squish again.
Eat and enjoy!

Re: Your Favorite Sandwich Creation....
Fri, January 9, 2009 - 10:49 PMI originally posted this in the Food Geeks tribe that had a similar thread to this one, look it up there are some WONDERFUL sandwich suggestions there:
Classic Cuban Midnight (Medianoche) Sandwich
INGREDIENTS
4 sweet bread rolls
1/2 cup mayonnaise
1/4 cup prepared mustard
1 pound thinly sliced cooked ham
1 pound thinly sliced fully cooked pork
1 pound sliced Swiss cheese
1 cup dill pickle slices
2 tablespoons butter, melted
DIRECTIONS
Split the sandwich rolls in half, and spread mustard and mayonnaise liberally onto the cut sides. On each sandwich, place and equal amount of Swiss cheese, ham and pork in exactly that order. Place a few pickles onto each one, and put the top of the roll onto the sandwich. Brush the tops with melted butter.
Press each sandwich in a sandwich press heated to medium-high heat. If a sandwich press is not available, use a large skillet over medium-high heat, and press the sandwiches down using a sturdy plate or skillet. Some indoor grills may be good for this also. Cook for 5 to 8 minutes, keeping sandwiches pressed. If using a skillet, you may want to flip them once for even browning. Slice diagonally and serve hot. -

Sat, January 24, 2009 - 3:53 PMBacon / egg sandwich on a soft roll. I must have ate 6 or 7 on a recent visit to Britain. Their bacon is different than ours though. It's better. Thicker and wider like a piece of ham. Mmmmmmmmm!!!
I also love turkey with bacon, cheese & avocado.

Re: Your Favorite Sandwich Creation....
Sat, January 24, 2009 - 4:57 PMTimbo, no one will ever fault you for making them a thin melty piping hot sandwich. It's THE thing to do after a long night of dancing your ass off to go to a Cuban sandwich shop and have one at midnight (hence the name).

Re: Your Favorite Sandwich Creation....
Thu, February 5, 2009 - 6:30 AMOh Nadia, your post has made me crave some fresh home grown tomatoes. Right now I'm getting some fairly decent ones from Italy here in the stores but I recall fondly when I used to have 4 different varities , with amazing output, growing in the garden when I lived in California. I also had 3 different varities of basil and when my dog came in from patroling the garden, he would smell so good after rubbing up against the plants! -

Thu, February 5, 2009 - 6:33 AMoh sorry, back to the subject- tonight I'm making pulled pork sandwiches - pork combined with gently fried onions, barbecue sauce and apple sauce. Hopefully this will make us think of warmer weather since it snowed again last night and is still snowing now!

Re: Your Favorite Sandwich Creation....
Thu, February 5, 2009 - 9:01 AMMy mom would brng in baskets of tomatoes every year... I might get some from her this summer, sense she has to come up to portland for docs appointment... but I miss those tomatoes so much. And the swimming....'
Anyway, I'm not sure if i'm going to be able to grow tomatoes well. I have this scroungy back yard that happens to have a "fruit bearing tree" in it, so I can't effect the roots at all... so I'm rejected to the 5 gallon buckets for my tommy toes... -

Re: Your Favorite Sandwich Creation....
Thu, February 5, 2009 - 10:28 AMHere's a delicious sandwich recipe that I stole from Mama Royal Cafe here in Oakland:
Gruyere and Tomato Open Faced Sandwiches (4)
1 Large tomato
4 slices of Sourdough Bread
A few ounces of Dijon Mustard
A few ounces of Gruyere cheese (grated)
1 bunch of Arugula (washed and dried)
Slice the tomato into thick slices.
Toast the sourdough bread lightly, then put a dab of Dijon mustard on it.
Put some arugula on the toast, then the tomato slices.
Top with grated Gruyere cheese then put under a broiler until the cheese has melted.
Enjoy!

Re: Your Favorite Sandwich Creation....
Fri, February 6, 2009 - 1:14 PMI like what my boyfriend calls a BELT Buster for breakfast. Essentially a BLT with addition of a lightly fried egg. Yum! I also really like curry tuna salad with cream cheese and kalamata olives.
